Sweet Relief: How to Beat the Heat With Honey

There's a point in every southern summer when the heat stops being charming and starts being a problem. That's when it's time to stop reaching for whatever's in the freezer and start making something better.

Honey might not be the first thing you think of for a hot day, but raw honey actually freezes and chills beautifully, holding onto its flavor instead of going flat the way plain sugar does. At Edisto Gold, our bees forage among organic blueberry farms, clover fields, and blackberry brambles along South Carolina's Edisto River, so even the simplest treat ends up tasting like the Lowcountry.

Here's a couple ways to find a little sweet relief this summer: 

1. Iced Lavender Honey Tea

Lavender is in full bloom right now, which makes this the perfect time to reach for our Lavender-Infused Raw Honey while it's at its best. The drink to make a pitcher of and keep in the fridge all week.

  • 4 cups brewed black tea, cooled

  • 3 tbsp Edisto Gold Lavender-Infused Raw Honey

  • Ice

  • Lemon slices, for serving

Stir the honey into the tea while it's still slightly warm, so it dissolves completely, then chill until cold. Serve over ice with a lemon slice. The lavender honey adds a soft floral note that makes an everyday glass of tea feel like something worth sitting outside for.

2. Honey Lemon Popsicles

The easiest place to start, and the most refreshing. Bright, simple, and exactly what a hot afternoon calls for.

  • 1/2 cup Edisto Gold Raw Lowcountry Honey

  • 1/2 cup warm water

  • 1 cup fresh lemon juice

  • 1 1/2 cups cold water

Stir the honey into the warm water until fully dissolved, then combine with the lemon juice and cold water. Pour into popsicle molds and freeze for at least 6 hours, or until solid. The raw honey keeps these from tasting like a sugary ice pop, with a rounder, more grown-up sweetness.

3. Hot Honey Watermelon Ice Cubes

A simple trick that turns a plain glass of water or lemonade into something worth a second look.

  • Fresh watermelon, cubed

  • Edisto Gold Hot Honey

Blend the watermelon into a smooth juice, stir in a small drizzle of Hot Honey, and pour into ice cube trays. Freeze until solid, then drop a few into iced tea, lemonade, or sparkling water for a sweet-spicy surprise as they melt.

4. Blueberry Honey Frozen Yogurt Bark

A no-churn dessert that comes together in minutes and disappears just as fast.

  • 2 cups plain Greek yogurt

  • 1/3 cup Edisto Gold Blueberry-Infused Honey

  • 1 cup fresh blueberries

  • Pinch of flaky sea salt

Stir the yogurt and honey together until smooth, spread onto a parchment-lined baking sheet, and scatter the blueberries and a pinch of salt over the top. Freeze for at least 3 hours, then break into pieces like bark. Keep it in the freezer until ready to serve.

Any one of these would make a hot afternoon more bearable. Made together, they're a freezer and fridge full of sweet relief, all summer long.
